Oatmeal Banana Cookies (inspired by this recipe)
2 cups rolled oats
3 large bananas
1 cup finely chopped dates
1/3 cup applesauce
1 teaspoon vanilla extract
Preheat oven to 350 degrees F; and mash the bananas in a large bowl. Stir in oats, dates, applesauce and vanilla. Mix well and let set for 15 minutes. Drop a tablespoonful onto a cookie sheet; and bake for 20 minutes or until brown.
I didn't have ripe bananas on hand, but luckily I had some frozen bananas. I also didn't have applesauce, but had apples. I peeled the apples and diced big chunks to boil in some water, for 20 minutes. After the apples cooked and cooled, I added them to the mixture along with the thawed bananas.
These cookies are so delicious and healthy, and they're a great snack for kids that have gluten intolerance.
